These are perfect served warm from the oven with butter. We often take them out with us on picnics too. I tend to make them in large batches and freeze them.
Ingredients
250g self raising flour
55g butter
pinch of salt
good pinch of cayenne pepper (or more to taste)
100g mature cheddar cheese, plus extra for on top
150ml full fat milk
Method
1. Preheat oven to 220 degrees
2. Sift the flour, salt and cayenne pepper into a bowl
3. Rub in the butter, either by hand, or in a food processor, until the mixture resembles fine breadcrumbs
4. Mix in the cheese, then add the milk slowly and mix until you have a soft dough
5. Tip the dough out onto a floured surface and kneed lightly
6. Roll out the dough to approx 2cm thick, cut out the scones and place onto a lightly greased baking tray. Sprinkle the tops with cheese.
7. Bake for 12-14 mins until the cheese is bubbling on top and the scones are browned. Place on a wire rack to cool
Happy baking! x

ReplyDeleteEnjoy! :)
DeleteThese sound delicious. Totally agree that shop bought ones don't have nearly enough cheese. My scone making skills do leave a lo to be desired but I'm still going to give these a try.
ReplyDeleteThese are really easy! I am sure they will come out great :) x
DeleteI made scones the other week, just with fruit.
ReplyDeleteHaven't had cheese scones for ages. Think Cameron and I will be making these very soon.

Thanks for hosting :) I'll be back next weekend! Let me know how the scones turn out x
DeleteJust made a double batch of these. They've been out of the oven for about 15 mins and half of them have already gone! (Not all me - there are 4 of us!!!) I was a bit short of cheddar so I used about 2 thirds cheddar to 1 third parmesan and also put a mixture of cheddar and parmesan on the top. (I use a fan oven and always find it's a good idea to brush the tops with milk or egg and press the cheese on to stop it being blown off as I put them in the oven.) It's a great recipe. Thanks so much for posting.
